Vegan Silken Chocolate Mousse Cups

Ingredients

  • 3.5 oz. (100 g) roughly chopped dark chocolate (I used 80 per cent and up dairy-free dark chocolate or vegan chocolate)
  • 1 package (12 oz.-340 g) organic silken tofu at room temperature, drained
  • 2 tablespoons maple syrup, raw honey or stevia to taste

Toppings (select one or two)

  • Coconut sprinkled sugar free
  • Mint on top and inside when blending
  • Black berries 5-7
  • Raspberries 5-7
  • Sliced Almonds 10-12
  • 3 Brazil nuts
  • Dollop nut butter with sprinkle cacao on top

Instructions:

  1. Meanwhile, place the silken tofu and maple syrup (or other sweetener) in a food processor and blend until very smooth. Add the melted chocolate and blend until well combined.
  2. Scoop the mixture into 3 cups or glasses, and refrigerate for 30 minutes.
  3. To serve, garnish with nuts, coconut, raspberries, blackberries, and a piece of fresh mint! You can also blend the fresh mint in the food processor to make it mint chocolate! Enjoy dolls!
