Vegan Silken Chocolate Mousse Cups
Ingredients
- 3.5 oz. (100 g) roughly chopped dark chocolate (I used 80 per cent and up dairy-free dark chocolate or vegan chocolate)
- 1 package (12 oz.-340 g) organic silken tofu at room temperature, drained
- 2 tablespoons maple syrup, raw honey or stevia to taste
Toppings (select one or two)
- Coconut sprinkled sugar free
- Mint on top and inside when blending
- Black berries 5-7
- Raspberries 5-7
- Sliced Almonds 10-12
- 3 Brazil nuts
- Dollop nut butter with sprinkle cacao on top
Instructions:
- Meanwhile, place the silken tofu and maple syrup (or other sweetener) in a food processor and blend until very smooth. Add the melted chocolate and blend until well combined.
- Scoop the mixture into 3 cups or glasses, and refrigerate for 30 minutes.
- To serve, garnish with nuts, coconut, raspberries, blackberries, and a piece of fresh mint! You can also blend the fresh mint in the food processor to make it mint chocolate! Enjoy dolls!
