Frozen Boo Banana Bites

An easy way to freeze bananas is to peel them and slice them into coins. Place them on a cookie sheet lined with parchment paper, and place them in the freezer for at least one hour. Once they are frozen, you can use them in this recipe, or save them in a plastic freezer bag for smoothies or yogurt!

Once the banana coins are frozen, spread a little almond butter (sugar-free organic I prefer ) on each one, and place the cookie sheet back in the freezer for about 30 minutes.

Ingredients:

  • 2 large organic bananas
  • 2 tbsps organic cinnamon in the chocolate sauce
  • ¾ cup coconut oil melted or vegan butter 3 tbsp
  • ¾ cup organic unsweetened cocoa powder
  • 4 Tablespoons organic maple syrup (to make more low calorie monk fruit sweetener 2 tbsp)
  • ¼ cup organic almond butter (or peanut butter or sun butter)
    sea salt flakes (needed and so yum)

Instructions:

  1. Slice the bananas into coins. Place them on a cookie sheet that’s lined with parchment paper. Freeze for 60 minutes, or until solid.
  2. Spread a small amount of almond butter on each frozen banana coin. Place back in the freezer for about 30 minutes.
  3. Place the melted coconut oil, cocoa powder, and maple syrup in a bowl and whisk together. Set aside and if doing the low calorie version monk fruit sweetener.
  4. Take each frozen banana slice and dip it into the chocolate. Use two forks to coat it and place it back onto the parchment lined cookie sheet. Sprinkle sea salt on top.
  5. Place the tray of chocolate covered bananas in the freezer for 30 minutes or until frozen solid. My absolute fave snack it gets rid of the sweet tooth and is so yummy and delicious!
